we are always near the same targets but haven't met yet...

I don't think there's anything like a multi-pitch 'rock' route over there.
Alpine rock, yes.
Must do in rock, I'd say:
- west ridge of Mt Cook
- south face of Mt Sabre (the closest from your request but horrible
weather)
- Malte brun
- some great potential inthe Darrens in Fjordland (see horrible weather)

I know Castle Hill. Pretty neat, right in the middle of the south Island.
